I've looked everywhere, even in the Style section of preferences where you can see an icon of fonts - I don't see any way to choose different fonts or sizes.

Would you please add a way to choose fonts for display and for printing or using during export?

   That's what custom stylesheets are for. You just need to modify the CSS in one of the default templates with the fonts and sizes you wish to use.
